Real King of Kerala Sadya "Kalan"



Kalan Recipe
Ingredients:
1. Raw banana   2
2. Coconut    ¼ cup
Green chilly   3 
Pepper powder  ¼ teaspoon
Turmeric powder  ½ teaspoon
Cumin powder  ¼ teaspoon
3. Coconut oil   1 tablespoon
Mustard seed  1 teaspoon
Curry leaves   1 stem
4. Curd   1 cup
5. Salt     As required
Peel the skin of the banana and cut into small pieces.
Boil this in a pressure cooker with salt.
Grind ingredients 2 finely and mix with the boiled banana.
Bring this to boil.
Add curd and bring to boil stirring continuously with a low  flame (caution: no high flame). 
Sputter the mustard seeds in oil, add curry leaves and pour this to the above

Chicken Istoo

Chicken- 1/2 kg, cut in to bite pieces.
Crushed Garlic- 2 tbsp
Chopped Ginger- 1 tbsp
Chopped Green Chillies- 2 tbsp
Green Cardamom- 5 nos
black pepper - 1 tsb
Cloves- 4 nos
Cinammon Stick- 1 small stick
Onions- 1 cup, diced
Coconut Milk- 200 ml thick coconut milk added with 300 ml of water (total 500ml)
Thick Coconut Milk- 100 ml
fried onion for  garnishing

This istoo is  cooked without any cooking oil
totally  oil free

In a  pan with warm water (3 cups) chicken and all spieces
garlic,chillies,ginger and cloves cooks the chicken for 5-8 mins ,when
 chickem cooks well add the coconit milks with  black pepper an
finally on top  frie onlion for  garshisng .

Pazham Ppazham pori - kerala snacks

pazham pori
plantains /Yethakka) - 5-8  sliced thin pieces
soda power - a pinch
Salt - 1/4 tsp
sugar -1/2 tsp
Allpurpose flour(Maida) - 1 cup
Rice powder - 1/2 cup
hot  water -  1/2 cups




Mix together maida and rice powder.with salt and sugar. Add water
enough to make a liquid paste, not  too  liqiud  and mix well.
Take pieces of plantain and dip in batter one by one.and eep fry in oil.

Enjoy with  a hot  cup of  tea

Green Beans Thoran--easy onee

500 gm - French beans, chopped to a medium size
1 small - Onion, sliced in mini
1/2 cup - Grated coconut
garlic - half  cup  sliced
green  chillies - 5-6 pcs in sliced
Salt to taste
1 tsp - Mustard seeds
Few curry leaves
oil -  2 spoon

IN   hot pan with oil and add mustard. After mustard pops, then  add
onion and  garlican  green c hillies and after  1 min add  green beans
cook on a low heat.ofor  5-8 mins .when beans is cooked, add the
grated coconut and mix in well. Finally a  curry leaves to  make more
greenaryy  Cook for 2 more minutes and take off stove.

Serve as a side dish with rice is  good!

Butter Chicken

Butter chicken

chicken bonless  750 gm
yogurt - 1 cup
 single  creamer - 1/2 cup
tomato purii - 400 grams
 Butter – 2 tbsp
 Ginger garlic paste – 1 tsp
  Chilli powder – 1 tsp
  Garam masala – 1 tsp
  Cumin seeds – 1 tsp
  Bay leaf – 1
kasturi mehti -  1/2 sppon
sugar  -  a hand pinch
  Curd – ½ cup
 Salt – to taste
cooking oil  - 3 spoons

In chicken apply a mixture of red chilli powder, lemon juice and salt
to the chicken and set aside for half an hour. Add red chilli powder,
salt, ginger-garlic paste, lemon juice, garam masala powder and oil.
Apply this marinade to the chicken pieces and refrigerate for three to
four hours. if  not  tandoor  ,  can deep  half  fry the  chicken .or
bake the  chickenin 175 dedree warm. Heat butter in a pan. Add green
cardamoms, cloves, peppercorns and cinnamon. Sauté for two minutes,
add ginger-garlic paste and chopped green chillies. Cook for two
minutes. Add tomato puree, red chilli powder, garam masala powder,
salt and one cup of water. Bring to a boil. Reduce heat and simmer for
ten minutes. Add sugar and powdered kasoori methi. Add cooked half
fried  chicken pieces. Simmer for five minutes and then add fresh
cream. Serve hot with naan orvchapathi better..enjoy da ..thank u
